Summer is moving fast ! This year, my summer was rich in summer fruits, more than in previous years. The abundance of berries, melons, stone fruits and even topical fruit has been delightful. However, I found myself consuming fewer summer veggies compared to past seasons. Of course, I still ate my veggies!

Whether prepared outside on a grill or roasted in the oven, summer vegetables like zucchini, patty pan, and crookneck squash are summer staples. I appreciate zucchini sliced in spears and perfectly roasted or grilled, these veggies bring nutrients, texture and flavor to a meal. Eggplant, when grilled just right—firm yet tender, not mushy—pairs beautifully with red, yellow, and orange roasted peppers.

A delightful discovery this summer has been the tangy crunch of freshly prickled green beans. The prickled beans add a refreshing twist to many of my summer dishes. Bringing additional taste and texture to the table were the summer tomatoes stewed with okra, garlic and onion. Local tomatoes with their heart healthy nutrients are always worth the wait.
In Michigan, as we move into late summer, the harvest of these vegetables and others will continue to inspire and nourish us right into the fall. Their versatility and vibrant flavors are perfect for creating delicious, plant-based meals that celebrate the summer season.
