
It has been a busy season! I have truly missed blogging. Hope you are eating good and staying well! As summer ends we still can enjoy summer veggies. Here is a new vegetable I have grown to love this year, Okra!
Okra is a vegetable that has a place in the heart of community. Good memories, good “eats” and good times remembered. Some recall the slime of okra and pass it by. I never ate okra as a child but seeing the beautiful pods at the Farmer’s Market this year I was eager to try something new. I prepared lots of okra and tomatoes this summer. This is the okra dish I enjoyed the most and it is BOOKED!
No frying here, but slowly blending seasonal fresh tomatoes, fragrant garlic, onions (before the recall), leeks, fresh red bell pepper, dried red pepper flakes, a little cumin and black pepper. Then cooking the okra quickly, in place of slow cooking it, reduced the viscosity or mucilage associated with okra.
Okra is a wonderful source of calcium, potassium, and magnesium, among many other nutrients. It is also a food suggested to help manage blood sugar levels. Fresh okra is more readily available during the summer months. Maybe we should freeze some fresh okra before it gets away. A thought …Stay Tune! Stay Safe!
