Summer Delights!

Cherries, peaches, cucumbers the works are in array to enjoy fresh right now in Michigan! Where to start, I love the freshness of each one. I enjoy reconnecting with summer food and flavors.

Cherries are a rich source of the antioxidant anthocyanin which gives them their red color.

Anthocyanin is also found in blueberries, beets and raspberries. You may recognize the name anthocyanin, as you are seeing more and more. It identifies anti-inflammatory, anti-diabetic properties beneficial to plant (color) pigments.

Tart cherries, are known to decease inflammation in the body. I eat fresh cherries for the same results. I am slowly making my way to prepare a long awaited cherry pie.

Cherries are a small stone fruit that can be easily added to smoothies, included in juice, eaten in salad or baked in a tart, or pie.

In a recent animal study a cherry- enriched diet was shown to lower total cholesterol and triglycerides. There are additional benefits to learn of. Also more ways to incorporate these summer delights into our diet.
